It comes from Periani, a family winery founded in 2003 in the village of Vejini, in the Alazani Valley of eastern Georgia.\u003c\/p\u003e\n\u003cp\u003eKhikhvi is one of Georgia’s lesser-known endemic varieties, prized for aromatic, high-quality white wines. Periani’s Khikhvi vines were planted in 2003 on the north-eastern slope of the Tsiv-Gombori ridge and are farmed with organic methods. The hand-harvested grapes are fermented in qvevri together with their skins and stems, then sealed in the qvevri for six to seven months – the ancient Georgian technique that gives amber wine its colour, texture and notes of ripe and dried fruit.
