Shilda Winery

Inspired by the mythological tale of Odysseus's journey to Georgian territory and his encounter with the goddess, this winery revives the ancient winemaking ritual known as Kirke's method.

The Kirke harvest tradition is a celebrated event at the winery. Under the full moon, when the grapes reach peak maturity, women carefully handpick the grapes. These grapes are then brought to the cellar before sunrise, ensuring they remain cool and intact before the crushing or pressing process.

A portion of the proceeds from each bottle sold is donated to support the discovery of the mythological region of Colchis.

In the homeland of wine, Georgian winegrowers have cherished vineyards like precious belongings for thousands of years. The tradition of maintaining old vineyards continues, as wine from old vines is believed to have unique characteristics with a more concentrated taste and structure. As vines age, they develop stronger and deeper roots, allowing them to absorb a diverse range of nutrients and minerals, which enhance the wine's vibrant aromas and flavors.
