This exquisite wine is created using traditional qvevri (pitcher) fermentation with 15 days of skin maceration, harnessing wild airborne yeast and minimal sulfites. The result is a wine with captivating aromas of wild pear and green apple, complemented by hints of hazelnut, apricot, and a finish of honeycomb. On the palate, it offers a delightful high acidity, good weight, and slight tannins on the edges. Perfectly paired with chicken dishes, river fish, and salads, Tsitska-Tsolikouri is a testament to the artistry of low intervention winemaking.
